Ingredients

  • ¼ cup Pro-Matrix Naked Whey
  • ½ cup coconut flour
  • 4 tablespoons psyllium husk powder
  • ½ teaspoon salt
  • 2 tablespoons grated parmesan
  • 1 tablespoon Italian spices
  • 2 teaspoons gluten-free baking powder
  • 4 eggs
  • 1 cup boiling water
  • coconut oil (for brushing)
  • toppings of your choice

Method

  1. Pre-heat oven to 190℃
  2. In a bowl combine all dry ingredients with an electric beater, mix until well combined
  3. Add eggs, mix until well combined
  4. Add boiling water, mix until dough thickens and starts to stick to the beaters
  5. Place dough on a greased baking sheet. Spray another sheet of baking paper with oil and place on top of the dough to help spread without sticking. Use a rolling pin to spread the dough into a 40cm round. The dough will rise 2-3 times in size, so make the thickness of the base a third of what you want the final pizza to be
  6. Place in oven and bake for 25 minutes
  7. Remove crust from oven and brush with coconut oil and return to oven
  8. Cook for 3-8 minutes or until crisp
  9. Add topping and your choice of cheese on top and cook for another 5-10 minutes or until cheese is melted and starts to brown
